    There's really no arguing that it's ugly. And kind of alien-looking. And yeah, even downright gross. But dang it! Scobys make some delicious kombucha! If you want to save a few bucks on your 'booch habit, there's just no getting around it. You're going to need a scoby. You can beg a scoby from a kombucha-brewing friend, or you can order a fresh one online. But there's one more option: you can grow your own. What is a Scoby? "Scoby" is actually an acronym: Symbiotic Culture Of Bacteria and Yeast. And that's exactly what it is! A scoby is the living home for the bacteria and yeast that transform sweet tea into tangy, fizzy kombucha — think of the scoby as the coral reef of the bacteria and yeast world. It a rubbery raft that floats on the surface of the kombucha. Aside from being a home for yeast and good bacteria, the scoby seals off the fermenting kombucha from the air and protects it from outside, undesirable bacterias while it's fermenting. P.S. You'll also sometimes hear scobys referred to as "kombucha mothers" or "kombcha mushrooms." If you read or hear references to these things, know that it's all the same thing.     Yes, this topic is older than I am, but so long as they keep showing up in the Forums, even these venerable postings may deserve a response. In this case, the link goes to a general Yahoo site that has nothing evident about a Southern (US) recipe. An online search (I use Bing in order to avoid yet another Microsloth product) reveals the recipe in question is for "pimento cheese."     Hi family, I made this again last evening. I do not know the reason behind cornstarch, but I followed this as posted and once again it was wonderful.  A favorite of David and I. What I did notice is quantities.  We bought two regular pie crusts of 9 inches.  The recipe seems to make more than one pie and less than two pies. We poured it into the two pies and this worked.  They weren't to the top, but this worked. I would suggest in the future to modify the quantity of ingredients by 50% to make two pies or to reduce the quantity of ingredients to about 2/3's if making only one pie. Once again, this recipe if followed is incredible. Hugs, Tim

    Dear Timmy: There is salt in the recipe but I'm not sure why there is no pepper.  And sour cream or applesauce served with potato pancakes is so automatic, I didn't even think to put it in the recipe!  THANKS I'm so happy to know you enjoyed them; and next time I make them, I'm going to add a dash of hot sauce too!  It is also possible that blandness is inversely proportional to how hungry one is!  I read during the Great Depression of the 1930's a man wrote there was so little food in his house that he rinsed out an empty catsup bottle with hot water and called it tomato soup!

    A nice touch if you are going to serve it as a main course is to add 8-12oz of cooked chicken(2 boneless skinless breasts is best).  I also like to bake some garlic breadsticks to complete the package. It's a quick yet tasty home cooked meal for folks who don't like to spend alot of time in the kitchen.
