    There's really no arguing that it's ugly. And kind of alien-looking. And yeah, even downright gross. But dang it! Scobys make some delicious kombucha! If you want to save a few bucks on your 'booch habit, there's just no getting around it. You're going to need a scoby. You can beg a scoby from a kombucha-brewing friend, or you can order a fresh one online. But there's one more option: you can grow your own. What is a Scoby? "Scoby" is actually an acronym: Symbiotic Culture Of Bacteria and Yeast. And that's exactly what it is! A scoby is the living home for the bacteria and yeast that transform sweet tea into tangy, fizzy kombucha — think of the scoby as the coral reef of the bacteria and yeast world. It a rubbery raft that floats on the surface of the kombucha. Aside from being a home for yeast and good bacteria, the scoby seals off the fermenting kombucha from the air and protects it from outside, undesirable bacterias while it's fermenting. P.S. You'll also sometimes hear scobys referred to as "kombucha mothers" or "kombcha mushrooms." If you read or hear references to these things, know that it's all the same thing.     Yes, this topic is older than I am, but so long as they keep showing up in the Forums, even these venerable postings may deserve a response. In this case, the link goes to a general Yahoo site that has nothing evident about a Southern (US) recipe. An online search (I use Bing in order to avoid yet another Microsloth product) reveals the recipe in question is for "pimento cheese." Thanks for sharing it! @Satoshi: Ingredients 1 cup unsalted butter 1/2 cup confectioners' sugar, plus more for rolling 1 teaspoon vanilla extract 2 1/4 cups all-purpose flour 1/4 teaspoon salt 3/4 cup finely chopped pecans 1/2 cup candied glace cherries, chopped Directions Cream the butter, sugar, and vanilla thoroughly. Sift together the flour and salt, add to the butter, and mix. Fold in the nuts and cherries and chill the dough for 1 hour. Preheat the oven to 400 degrees F. Roll the dough into 1-inch balls and place on an ungreased cookie sheet (they do not spread as they bake). Bake until set but do not brown, about 10 minutes. While still warm but set, roll the cookies in confectioners' sugar and cool. Roll in confectioners' sugar again and bake again for 10 to 12 minutes.

    @zebrapenis: Great recipes! I wish more people saw this and realised that vegan cooking can be simple, straightforward, and tasty (and relatively inexpensive). Aquafaba can really amp up the taste of veganfoods, tbh.

    @Zeitgeist: @cteavin: @Zeitgeist: Do you happen to have that coconut curry recipe? I'm always on the hunt for new ways to cook food. Do you have some more accurate measurements? How much chicken? I know that we shouldn't quantify everything, but I'm a big recipe guy and like to know what to do step-by-step because cooking can be stressful ngl. The more specificity, the better in my opinion. For that? No. It's just a pinch of this and a pinch of that. If you go over to my blog there are some curry recipes there with detailed info on how to prepare. In fact, one of my first posts was on Indian curry (I studied cooking in India for six months – my Indian foods are amazing). The link is in my profile.

    @deno221: Hi chef, same for me! I really liked making Italian after i moved out from home to study in college. My mother was always preparing the meal, i didn't have to learn cooking in high school. After I moved I wanted to make a perfect basic dish, i learnt to make a risotto, i still love it, my favourite in Italian cousine. Such versatile, you can add almost anything you want if the texture fits with rice. Preparing a broth for risotto day before is always fun and after you finish with butter and parmigiano, the smell you feel, just amazing. My favourite herbs/spices for risotto are rosemary and saffron im still learning the art of a perfect risotto, damn but the ones you make sound delicious! i must catch up on my skills sometime man! great to meet a fellow chef!

Is the red in the pics i googled tomato sauce? the croquembouche is actually a holiday dare from a friend of mine. since i wasnt originally planning not to do desserts this time around since i'll be cooking a lot. @brianboru72: thank you. i do try and do something special on holidays when i'm in charge of the menu. yup we'll be in manila. sadly stranger danger LOL mmmm  queso de bola…...
