      This is a very special delicate Levant mezze. You can serve with drinks or just as appetizer.
      It is a raw meat dish.

      Ingredients (4 servings):
      1/2 lb red lamb meat (no fat)
      1/2 cup bulgur (bulgar)
      ( you can change meat and bulgur measures as you wish)
      1 small chopped onion.
      Salt and black pepper.
      mint leaves.
      A pinch of chopped parsley.
      A pinch of chopped  basil.
      (You can choose your favorite herbs and spices but it tastes better with these ingredients)

      Method:

      • Place the Bulgur in a small bowl and rinse it with cold water, then dry it with a sieve. Place it aside.
      • place the meat in a food processor along with about 5 cubes of ice.
      • Add the chopped onion, salt and pepper.
      • Place the meat in a bowl and add the bulgur and mix with your hand.
      • Add cold water little by little if needed, as the mixture should be soft and smooth.
      • Add chopped parsley and basil, and mix well.
      • Garnish with mint leaves and season with olive oil.
