Your understanding of US culture is truly amazing... but I think the term you wanted was HONKYThe term "cracker" is generally reserved for whites in the South (also, typically poor). (How would I know? I live in Florida)
It should also be noted that, much like the Black culture's adoption of the n-word for referring to themselves, Whites in rural GA and FL used to refer to themselves as "crackers" to indicate that their ancestry was right there - they weren't "recent" immigrants. In fact, former FL Gov. Lawton Chiles (a Democrat) used to claim often that he "was looking for that old-time cracker vote".
Finally, as the final "nail in the coffin" of using "cracker" as white-equivalent of the n-word: There is an official "Florida Cracker Trail" - a hiking trail that cuts through Central FL along what were once cattle trails through the brush and swamps.
Even so, while the majority of whites refer to the n-word in this way - I'm not aware of any hesitance by anyone else to using the terms cracker or honky... perhaps they're just not as pejorative?

I've given examples of whites - here in Florida - calling themselves crackers (and being proud of it!). And again, there is a current - modern day - Cracker Trail that is named by, maintained by, and advertised by the Great State of Florida!
Eating hominy grits for breakfast is more common in the South than up in the New England States - but that doesn't mean they don't exist there!
I'm sure some Scottish troll has used the term cracker at some point - that doesn't change its etymology or more common use!
Cracker is not synonymous or equivalent - on any level - with the n-word.
In terms of being a purely pejorative term, the closer cousin is Honky
But, there isn't a really similar word that's used by Blacks in a pejorative way, but used by Whites as self-referencing without the pejorative connotation...You're using a similar, overtly and intentionally flawed comparison - in much the same way you claim that Black racism somehow excuses and outweighs White racism (of course, all the while, IGNORING racism not associated with skin tone!).
