Spinach Surpise
1 10oz package frozen spinach (thawed & drained)
1/4 cup chopped onion
4 T butter or oil of choice
1/2 cup sour cream or plain yogurt
1 t vinegarMelt butter, cook onion for 10 minutes. Add spinach, stir until hot. Add sour cream & vinegar. Stir and serve.
