I have to start off with the humble radish. Nothing is easier to grow. While I'm not that fond of their sharp taste in their raw, unadulterated state, they are really lovely if pickled or sauteed with bacon.
Radish greens have a peppery bite in salads, and if you want to make this low-calorie food a little naughty, find recipes for radish chips. Black radishes are really beautiful on a plate. I'm seeing all these variations more at restaurants these days.
Have you grown radishes before? Do you have any guides for growing them? I'm a terrible gardener and don't want a finnicky plant which requires a lot of attention, water, and fertiliser.

Other crops that need minimal attention: carrots, leaf lettuce, and herbs like mint or chives.
You may have to worry about animals like squirrels.

I really like mustards since they add a little bit of extra flavor to salads and you generally get a quicker harvest vs. other veggies.

mustards have been easy for me and relatively pest free vs other greens like chard. plus, mustards are a great addition to salads
