If each individual votes anonymously, how can there be a demographic statistic of which ethnicity voted for whom.
meaning how can they say that a certain percentage of a population voted for Republican or Democrat?
populations examples: white, white college graduate, Hispanic, women, Latinos, Blacks, Asians etc…

I dont know about the US but here there are stats instituts who ask people just when they go out of the voting building. they are not required to answer of course and if they do it's anonymous. thats how we know people who are like 18-24 vote this while older people vote that. ( of course racial stats are absolutely forbidden over here). My guess is it's the same, stats companies do interviews. Also they have stats on who lives in which part of town hence you can extrapolate the results.

Exit polls take a sample survey of people post voting with a sample size of 1000 per venue (total size 100k for full elections). They then use the data from that to extrapolate general sentiment and voting trends within a population, per ethnicity, gender, sexual orientation etc.
