But in my torrent client (uTorrent 3.5.5), they don't show up as peers
until my client updates the torrent with the server, which seems to be 30 minutes later. At that point the leechers will connect...but that means that some of them have been hovering in the void for half an hour.

Is there some way to force my client to update the torrent and get these people connected?

Stop the torrent and do a Force/start or force resume ...
Instead of waiting 30 minutes for tracker to updates ...
This works if someone grab or downloaded the content ... It may show dead for awhile but it may update soon ...
