They are all "completed" but I only downloaded 1/13 files for example for one - and it keeps showing it as leeching. Please advise on what I can do to "delete" it / remove myself as a leecher from the tracker list. I'm using qbittorrent

Deleting the torrent wasn't always working (had to redownload the torrent file and save it in the same place... then delete the GT tracker from it and pause, then just waited and it fixed itself after 10-15 mins) Thank you!

I don't know of any way to seed a partial torrent and have it counted as complete for the tracker. This is true with any torrent software, not just qbittorrent. I created a tag for files in qbittorrent that I only plan to partially download, so that I can easily find them and pause them when complete.

You will stop seeding what you have but you will no longer be considered a leecher. If you and the torrent are connected to the tracker you will be considered a leecher if <100% complete.
