An SRT file is a simple .TXT file, renamed, containing the subtitles to display in a very simple format:

Subtitle number
Start time –> End time
Text of subtitle (one or more lines)
Blank line

Example:

00:00:21,000 --> 00:00:24,400
Uwe is a stupid guy

00:00:50,000 --> 00:00:53,000
No, I am not

It is the most used format for sub-titles, certainly because of it's simplicity making it accessible to everybody.
Usually the file name needs to be the same than of the movie file

moviename.avi
moviename.srt
moviename.eng.srt
moviename.fra.avi

The MKV container allows to integrate SRT subtitles (and other), then using UTF-8 character coding

If my understanding is correct, .srt files are side files that come separate from the video… More like an informational piece. If I'm wrong, someone please correct me on that.
