Applian Media Catcher is able to intercept a lot of streams
Applian Video Capture records sections of your video screen
Techsmith Camtasia also records sections of your video screen (but is not as user friendly as Camtasia)
Techsmith Snagit can capture not only still images but also video
WinX HD does a good job capturing some streams, especially Youtube URLs

Those 5 are all great programs.  There are probably 100 others that are advertised as doing the same thing, but they are shit.
