                      Fried Rice with lots of veggies

                      Pasta (not baked ones though - taking all the shit out of the oven, cleaning after cooking and putting all the shit back in is a serious cooking turn off)

                        Way back when I worked at an upscale Italian place, I was taught how make a white seafood lasagne that was done as a special. I was very proud to learn this one. The pasta was made in-house as was the Mornay sauce, a Béchamel sauce with Gruyère cheese added. The seafood was fresh (never frozen!) shrimp and scallops. Lots of fresh spinach to round it out and give it some color. Grated cheeses, of course. The result was sinfully rich. I tried this at home once and it worked just fine, but even so, damned expensive to do and rather labor intensive ;D Now tortellinis I won't do. Annoying things. You have to make at least 100 of them just to get 10 orders. I'd rather peal garlic. Which I also had to do as this place didn't believe in that pre-pealed shit. It was serious about its food. This is where I figured out why high end restaurants cost so much. The man-hours alone that went into allowing this place to be open for four and a half hours (five and a half on weekends) was phenomenal. To the guy who likes making sausage; well, I had to do that also. It's kinda gross. Also, when I was first set up to stuff the casings, my eventual reaction was, "Just how the fuck long ARE pig intestines???" Uh, natural casings, ya know 😉

                          Hi chef, same for me! I really liked making Italian after i moved out from home to study in college. My mother was always preparing the meal, i didn't have to learn cooking in high school. After I moved I wanted to make a perfect basic dish, i learnt to make a risotto, i still love it, my favourite in Italian cousine. Such versatile, you can add almost anything you want if the texture fits with rice. Preparing a broth for risotto day before is always fun and after you finish with butter and parmigiano, the smell you feel, just amazing. My favourite herbs/spices for risotto are rosemary and saffron

                            LOL, indeed.  That's why I will never prepare hors d'ouvres…I'll be damned!

                            Also, please, a minute of silence to honor the brave kitchen slaves workers who prepare lots and lots of them for banquets and events.

                                Lasagna is easy if you have everything prepped beforehand.  And even easier with those modern lasagna sheets that bake in the oven, no need to cook them in boiling water.

                                (Though you need to cover them in the sauce thoroughly, otherwise they won't moisten during baking and remain raw) :C
